Soup with a difference Summer dew Watermelon gazpacho for hot days
Have you ever tried cold watermelon soup? If not, do it today, because there can hardly be more fun in summer.
Ingredients for 4 servings:
1 yellow pepper
1/2 roll wheat
40 ml olive oil
1 tablespoon apple cider vinegar
1 splash of lemon juice
Buds (for garnish)
basil (for garnish)
Roughly per part:
10 grams of fat
19 grams of carbs
3 grams of protein
This is how it is done:
Watermelon peel. Wash the pepper and remove it. Peel the cucumber and onion. Slice everything, including the cake.
Puree the fruits and vegetables in a blender, then add the bread rolls, onions and other ingredients and chop as well. Season with salt and pepper and decorate with buds and basil. This was it!
Soup in the summer? Phew, isn’t this method too hot? Not if the gazpacho is cold. We already know the classic way with cucumbers or tomatoes, but they can also be prepared with fruits. And it can be a delicious treat, as honey melon gazpacho shows. It may be sweet, but it’s seasoned with vinegar, citrus juice, salt, and pepper, and so it’s the perfect way to satiate a simple midday hunger on a hot day. If you like, you can even season everything hot – for example, stir in a dash of Tabasco or a few chili flakes.
Of course, watermelon aphids will taste better if you put them in the fridge again before eating and bring them back to a frozen temperature. At least it’s warm outside! In order not to get bored, other cold soups bring enough variety to the menu. For example, we have a cold vegetable soup made with cucumbers, peppers and carrots.
