Asparagus soup is definitely one of the most popular dishes we cook with the stems. Until everyone at the table is full, you’ll receive a vegan recipe from us today.

Ingredients for two servings:

  • 250 g white asparagus
  • 1 onion
  • 1/2 tablespoon vegetable ghee
  • 1/2 teaspoon flour
  • 250 ml vegetable broth
  • 100 ml vegetable cream
  • 1/2 lemon (juice)
  • salt pepper

This is how it is done:

  1. First cut off the wooden ends of the asparagus spears. Then peel the stems and remove the ends, but keep them. Cut the remaining stems into small pieces. Peel the onions and cut into cubes.
  2. Now we put a saucepan on the stove and stir the onions in the margarine. Add the flour and roast a little, then pour the broth over it, stir well and add the asparagus pieces to the saucepan without the sides. Simmer for 15 minutes on low heat.
  3. Next, pour vegetable cream over it, stir, and remove the soup from the stove. Mash, season with lemon juice, salt, and pepper and now flip the ends of the asparagus. Put it back on the stove for another 5 minutes. Been completed!
