Cold Soup Recipe: This vegetable soup keeps you healthy – even without chicken

  • 1 onion
  • 2 garlic cloves, peeled
  • 1/2 celery
  • 2-3 carrots, parsnips or parsley
  • 1/2 bunch parsley
  • 1 bay leaf, thyme sprig or Maggi herb
  • 1 piece ginger, sliced
  • 1/2 turmeric root (Warning: Stains badly!), sliced
  • 2 tomatoes (chopped) optional!
  • olive oil
  • 1 teaspoon salt

Good-tasting or seasonal vegetables are allowed. for example:

  • zucchini cut into cubes

  • Green beans

  • Chopped fresh herbs, such as parsley
  1. Cut the onion in half, roughly chop the garlic cloves, celery and turnip and fry vigorously in olive oil. Then pour plenty of water (one to two liters). Parsley (especially stems), bay leaves, ginger and turmeric (possibly tomatoes) are added.
  2. Salt everything and let simmer, covered, for at least an hour – longer for even better. The broth Pour it through a strainer into another saucepan and discard the cooked vegetables.
