Useful and delicious Tortellini in Prodo: Light Italian Cuisine
There are also light dishes in Italian cuisine that are also a real treat for the soul. Best example: these gorgeous tortellini in prodo. a poem!
Ingredients for 4 servings:
1 kilo beef soup
2 liters of water
1 bay leaf
1 tablespoon salt
400g tortellini (from the refrigerated section)
40 minutes (including cooking time)
This is how it is done:
The first thing to do is prepare the broth. To do this, put the meat broth in a large saucepan and cover it with 2 liters of cold water. Boil it all and then peel it.
Meanwhile, peel the carrots, celery, and onions and roughly chop them. Wash the leeks, remove the ends and cut them into rings. Add all the vegetables to the pot along with the herbs and spices. Cover it halfway with a lid and leave it on medium heat for two hours.
Then remove the soup from the stove and let it cool slightly. Strain the soup into another saucepan through a sieve lined with a clean kitchen towel to filter out any fat and other ingredients.
Place the saucepan with clear stock on top and allow the tortellini to simmer in the stock according to package directions. Season if necessary – over!
advice: Our tortellini in brodo is especially delicious if you sprinkle freshly grated Parmesan over the soup before serving. Simply heavenly!
