Spanish vegetable soup with chili

A Spanish classic and a splash of color perfect for the cold season: Spanish vegetable soup with chili!
This light and tasty Spanish vegetable soup with chili is the perfect start to a traditional Spanish evening.
This is how it is done:
- Wash and clean the vegetables well. Eighth, onions. Cut the garlic into small cubes. Cut the seeded peppers into very thin rings. Cut the zucchini and mushrooms into thick slices and pepper into small pieces. Rinse the corn.
- Heat the olive oil in a large saucepan. Saute onion, garlic and pepperoni for 2 minutes, stirring. Add fresh vegetables and continue frying for 3 minutes. Pour the tomato passata, tomato juice and 100 ml of water. Bring the mixture to a boil with the lid on and continue to simmer over low heat for 10 minutes.
- Add the corn and simmer for another 10 minutes and season to taste with the chili flakes and lemon. Sprinkle with chopped parsley or cilantro in portions.
