Bean soup with sour cream is always a very special taste experience.

Simple and stunning: this delicious and hearty bean soup with sour cream and sumptuous toast awakens the best childhood memories.

Ingredients for 4 servings:

  • 500gm fresh or frozen green beans
  • 2 onions
  • 3 tablespoons olive oil
  • 1 1/2 liters vegetable broth
  • 2 potatoes
  • 1/2 bunch parsley
  • 100 ml cream
  • 1 teaspoon herbal salt
  • Pinch of freshly ground black pepper
  • Lemon juice
  • 4 tablespoons sour cream
  • Toast

This is how it is done:

  1. Pick and wash the beans. Cut off the ends with a kitchen knife. Cut the beans into small pieces. Peel onions and chop finely.
  2. Fry onions in oil in a large saucepan. Add the beans and my heart a little. Then pour the vegetable broth.
  3. While the beans are cooking, peel the potatoes and cut them into small pieces and add them to the soup. Wash the parsley and cut it into small pieces and add it to the soup as well. Cover the mixture and let it cook for 15 minutes.
  4. Then pour the cream and season with salt, pepper and lemon juice. Remove the saucepan from the stove, mash the soup with a hand mixer or in a blender and gradually stir in the fresh cream. Serve with toast and enjoy warm.
