Orofino Restaurant in Mönchengladbach:
Chicken soup according to grandma’s recipe
Mönchengladbach For safety reasons, all restaurants are closed. Many restaurateurs have come up with alternative concepts to find their way to their customers. For our readers, some have revealed a spiritual food recipe for this time. The beginning of Orofino, Turkish cuisine with tradition.
For Muzaffar Inanishi, there is only one dish that can comfort his soul in difficult times: red chicken soup based on his mother’s recipe. We serve it as “Arabic Chicken Soup”. That’s the common name for them, but there’s nothing Arabic in the soup,” says restaurateur Zoppenbroich.
He does not know why the soup is called so, only that it is known to everyone in its native land, the area between the Taurus Mountains and Central Anatolia. “In the winter we had soup in the house almost every day. It warms you up from the inside and feels good when you don’t feel that way. Every housewife in the area has her own recipe for soup, the most important of which is the flour roasting.”
Because if it is roasted too much, the taste of the soup burns. There are also different approaches when it comes to the meat itself. Inanici will never use a rooster because its meat is too tough for him. He prefers the leg and breast of a large broth chicken: “So the broth has more flavor than the alternative with a small chicken.”
Inanici will not only serve chicken soup at Orofino to its guests for the time being. On March 19, he closed his restaurant indefinitely. Since then, he has been delivering food or making it available for customers to collect at the entrance to the restaurant. Of course, Arabic chicken soup is also on offer. “We actually saw a drop in sales last week due to half of the table reservations being canceled,” he says. When the city organized restaurant hours from 6 a.m. to 3 p.m., “I went out. We’re not close enough to downtown Reddit for a purely lunch menu,” laments the 61-year-old, who has lived in Germany for 50 years.
He sends his 10 employees home, and takes care of the delivery service with the help of his wife and two children. He does not know how to proceed. “Financially, I can’t keep the restaurant closed for three months.” He has already contacted the banks about a bridge loan.
He feels great solidarity from friends and regular customers: “People call me every day and ask how they can help me. It gives me hope,” says Inaneshi. He and his wife now spend a lot of time hiking together in the country lanes near Orofino: “I think positively. Now I enjoy free time with my family.”
