Fancy a creamy treat? How about Karcho – spicy lamb stew from Georgia – refined with aromatic herbs.

Ingredients for 6 servings:

  • 1 kilo of lamb
  • 2.5 liters of water
  • 120 gm rice
  • salt
  • 2 tablespoons tomato paste
  • 4 onions
  • 3 tablespoons vegetable oil
  • 1 tablespoon flour
  • 1 parsley root
  • 1 bay leaf
  • pepper
  • 60 g walnut kernels
  • 1 teaspoon Georgian herbs mix
  • 125 ml pomegranate juice
  • 4 sprigs of coriander
  • 4 sprigs of basil
  • 1 hot pepper
  • 5 garlic cloves

Roughly per part:

  • 550 calories
  • 30 grams of fat
  • 22 grams of carbohydrates
  • 39 grams of protein

Preparation time:

  • 2 hours (plus 10 minutes rest)

This is how it is done:

  1. Wash the lamb and cut into 5 to 6 pieces. Place in a large saucepan, cover with water and cook for 1.5 hours. Get rid of the foam regularly.
  2. Then pass the broth through a fine sieve. Cut the meat into small pieces. Put in a small saucepan and cover with a ladle of broth.
  3. Pour the remaining broth into the large saucepan and bring to a boil. Rinse the rice well under running water. Put in the boiling broth and salt. Add the minced meat to the broth and cook over low heat for about 10 minutes. Add tomato paste and stir.
  4. Peel the onions, finely chop and lightly fry in oil in a frying pan. Sprinkle with flour and stir over medium-high heat for 5-6 minutes. Take it out of the stove.
  5. Peel the parsley root, rinse with cold water and grate on a coarse kitchen grater. Add to broth with onions and bay leaves. Season the broth with pepper.
  6. Grind the walnuts in a blender and add to the soup. Leave to cook for 5 to 6 minutes. Add the mixture of herbs and pomegranate juice to the soup. Simmer on low heat for 5 to 6 minutes. Season with salt to taste.
  7. Wash the coriander and basil, shake it to dry and pluck the leaves. Wash the hot pepper and cut into thin rings. Peel and press the garlic cloves. Put the coriander, basil and cayenne pepper in a blender until you get a smooth paste.
  8. Remove the soup pot from the stove. Stir in the herbal paste. Cover the soup and leave it for 10 to 12 minutes. Then fill them in decorative plates or bowls and serve. enjoy your meal!
