Not only fun in the cold season: hearty chicken soup.

Chicken soup, vegetable soup with celery, leeks and carrots, as well as onions and salt, are the main ingredients of home-cooked chicken soup. The chicken is cooked as a whole, and only the rump should be removed along with the sebaceous gland. It is better to cut the onion in half in advance, roast it briefly and add it along with the peel – this guarantees a nice color.

Put all the ingredients in a saucepan and add the ginger, a leaf or two of bay leaf and whole peppercorns, if you like. Fill with cold water and bring to a slow boil. Then simmer for about an hour or two, removing the foam from the surface with a ladle from time to time.

Delicious with peas, rice and pasta

At the end of the cooking time, remove the chicken from the bones and cut it into small pieces and add it to the soup with vegetables such as carrots and peas. If you like the soup very pure, pour it into a colander beforehand. Add rice or noodle soup if you like and cook it into the soup. Tip: If you want to reheat the soup later, cook the rice and noodles separately and add just before serving so they don’t stain.

Make your own eggs

Besides pasta and rice, egg custard is a classic addition. To do this, simply mix the eggs with a little cream or milk, season with salt, pepper and a pinch of nutmeg and leave the mixture covered in a water bath for 20 minutes until set. Then remove from mold and dice.

Chicken soup can also be frozen. Add noodles or rice to the soup only after defrosting.

Even our great-great-grandfathers appreciated chicken soup as an effective home remedy for the common cold. Studies now confirm that they were right. The components of the soup have a decongestant effect on the mucous membranes of the respiratory tract. In addition, the vitamins present as well as zinc and iron strengthen the immune system. In addition, the body absorbs a lot of fluid through soup – this is especially important when you have a cold.
