Anyone yearning to cool off in summer should eat a bowl of cold vegetable soup.

You certainly haven’t cooked soup so quickly – although “cook” is the wrong word here, because this soup is not heated. This makes it perfect for the upcoming warm days.

Ingredients for two servings:

  • 1 cucumber
  • 1 yellow pepper
  • 1 carrot
  • 1 stick of celery
  • 2 green onions
  • 150 ml tomato juice
  • 1 1/2 tablespoons olive oil
  • salt pepper
  • 1 lemon (juice)
  • Tabasco (optional)

Roughly per part:

  • 245 calories
  • 15 grams of fat
  • 18 grams of carbohydrates
  • 5 grams of protein

This is how it is done:

  1. First, remove the peel from the cucumber and cut it in half lengthwise. Remove the cores. Wash and clean the peppers, peel the carrots, rinse the celery and chop everything into small pieces. Now wash and chop the green onions.
  2. Mash the vegetables, then add the tomato juice and oil. Finally, season the cold vegetable soup with salt, pepper, and lemon juice—if you like—also with Tabasco. Been completed!

Keep your cool in the summer—preferably with this cool vegetable soup. It comes with all kinds of fresh vegetables and thus provides an extra taste. It is seasoned with lemon juice to make it brighter. And for those who like it spicier, a shot of Tabasco warms things up—if summer isn’t hot enough for you.
