you need: 1 cauliflower, 1 garlic clove, 250g grated cheese (such as Gouda or Emmental), 100g butter, 80g flour, 200ml cream, 200ml milk, 400ml vegetable broth, 3 tablespoons olive oil, Pinch of pepper, pinch of nutmeg, ½ teaspoon salt

This is how easy cauliflower casserole is made
This is how it’s done: Boil water in a large pot. Add 1 teaspoon of salt. Meanwhile, wash the cauliflower well and remove the leaves and stem. Divide the cauliflower into large florets. When the water boils, boil the cauliflower florets in it for five minutes. Then immediately rinse the cauliflower in ice water. drain well.

Prepare the sauce. To do this, melt the butter in a saucepan. Stir in the flour and fry for two to three minutes, stirring. It should not turn brown. Add milk and cream and stir well. Bring the mixture to a boil, stirring constantly, until the sauce thickens. Remove the pot from the stove and stir in the vegetable broth. Season to taste with remaining salt, pepper and nutmeg.

Grease a casserole dish with olive oil. Peel the garlic, press it and put it in the casserole. Add cauliflower. Pour the béchamel sauce over it and cover with cheese.
