Ingredients for 4 servings:

  • 800 ml vegetable broth
  • 500 grams ripe or canned tomatoes
  • 1 red pepper
  • 1 onion
  • 1 clove garlic
  • 1 red pepper
  • 1 zucchini
  • 2 tablespoons of oil
  • 150 grams of couscous
  • salt pepper
  • basil
  • Fresh grated Parmesan cheese (optional)

Roughly per part:

  • 230 calories
  • 6 grams of fat
  • 35 grams of carbohydrates
  • 6 grams of protein

Preparation time:

  • 10 minutes (plus 20 minutes cooking time)

This is how it is done:


  1. Boil vegetable broth in a saucepan. Heat about a liter of water in a kettle.
  2. Boil fresh tomatoes with water from the kettle, rinse and chop finely.
  3. Wash and dry the hot peppers and chop them into coarse slices. Peel the onion and garlic and cut into thin slices. Wash the peppers, cut them in half, and cut the seeds into small pieces. Wash the zucchini, trim the ends, cut in half lengthwise and cut into slices.
  4. Heat the oil in a saucepan, and saute the chili, onion and garlic over medium heat until translucent. Add broth and tomatoes. Bring the mixture to a boil and simmer for ten minutes. Add pepper and zucchini. After five minutes, add the couscous. Season the soup with salt and pepper and serve garnished with basil. If you like, you can grate fresh Parmesan cheese over the tomato soup. Enjoy the happiness board!
